A little bit about the workshop

The macaroon, the always trendy pastry which is a delicious colorful decoration, everybody knows already, but did you know that there are two types of macaroon? One is Swiss and one is French, and three types of European meringue can join them – the French one which is a meringue without cooking, the Swiss and the Italian (both cooked). The difference between the cooked meringue and the non cooked meringue, is what creates the difference in the flavor, the durability and the texture, which creates a sweet and joyful macaroon variety.

Both the French and the Swiss macaroon are extremely delicious and beautiful, and that’s why it’s important to me to teach you how to make both of them.

In the workshop we will learn in small groups with close personal support, about each ingredient of the macaroon and how to prepare it, we will experience different types of filling (ganache) and adapt them to the macaroon and give you frontal instructions and individual assistance in your personal baking stations, where you will have the most advanced kitchen utensils waiting for you.

All you have left to do is to choose which type of macaroon appeals to you most and prepare it like top confectionery chefs in the workshop and at home.

Personal macaroon workshop – small groups

In my studio at most six participants take place in a workshop. As a believer of personal attitude and experience in each stage of the preparation, I believe that indeed we have a bout five hours ahead of us of learning and experience, tips and tasting and still, a small group and a feeling of private tutoring – this is the name of the game.

Learning in Israel in the Cordon Bleu method

The Lyza Tuval macaroon workshop is managed just like in the largest hotelier school the Cordon Bleu. First of all, we will get to know the raw materials and discover the secrets for successful baking. Then, I will demonstrate and you write in your own words so that you can recreate it step-by-step at home as well. Only then we begin the stage of personal experience.

Personal workstation for everyone

Each participant has an induction stove and a personal mixer which will be used to prepare French and Swiss macaroons. No other place gives you the opportunity to experience personally and in your own pace each of the stages, and makes sure, along with you, that the product is perfect.
We will study the differences in texture and flavor, we will correct flavors, decorate perfect circles, and if they’re not perfect we’ll correct again, and study ganache, another colorful and tasty science. Two types of macaroon, preparing ganache – there is no competition!

What will we learn?

After you complete a macaroon workshop you will leave like Pierre Hermé, the macaroon king of France, at least to those around you. My recommendation? You don’t have to prepare macaroon for every event, even though anyone who will taste your macaroon after the workshop will ask for them again and again.
